Stuffed Meat with Green Peppers

Stuffed Pork with Green Peppers is a classic dish from Sichuan Province in China, which features ground pork and green peppers as its main ingredients. The juicy green peppers are stuffed with a flavorful meat mixture perfect for any occasion. You can follow these simple steps to make your own at home.

Ingredients

  • Green Bell Peppers: 6 medium-sized, preferably with thick flesh
  • Ground Pork: 300 g (a good mix of lean and fatty, 3:7 ratio recommended)
  • Egg: 1pc
  • Garlic: 15g
  • Scallion: 20g
  • Carrot: 30g
  • Soy Sauce: 1tbsp
  • Cooking rice wine: 1tbsp
  • Oyster Sauce: 1tbsp
  • Salt, sugar, white pepper powder: 1/4 tsp
  • Tapioca starch: a little
  • Cooking Oil: for frying

Tips

  1. Prepare the Meat Mixture 

In a large bowl, combine ground pork with garlic, scallion(reserve some for garnish), carrot, salt, sugar, white pepper, soy sauce, oyster sauce, and rice wine. Mix well until the mixture becomes sticky. Add the egg, continue mixing until the meat mixture is smooth and tender.

  1. Prepare the Peppers 

Wash and dry the green peppers, remove the stems and seeds. Slice them into small sections. Sprinkle a little tapioca starch inside the peppers.

  1. Stuff the Peppers 

Using a spoon or your fingers, fill the peppers with the meat mixture, pressing gently but not too firmly to avoid compactness.

  1. Fry the Stuffed Peppers 

Turn on your gas pizza oven to preheat. Heat a skillet over medium heat and coat with cooking oil. Once hot, place the stuffed peppers with the meat face down into the skillet and cook it gently on low heat. Fry until golden brown and the meat is cooked through. It takes about 2-3 minutes. Then flip them over and fry the other side until the peppers become tiger skin.

  1. Make the Sauce & Thicken 

In a small bowl, mix soy sauce, water, and the remaining tapioca starch to create a new sauce. Pour the sauce into the skillet, bring to a boil, and let it simmer until the sauce thickens and then coats the peppers.

  1. Plate & Garnish 

Transfer the stuffed peppers to a serving plate and garnish with the reserved garlic and scallion.
